Domaine Sylvain Loichet, Chorey Les Beaune, Burgundy, France 2010

Domaine Sylvain Loichet is located in the heart of Burgundy in Chorey-les-Beaune . Since the takeover in 2005, many changes were made, while the vineyard is now in organic farming to meet the land, the ecosystem and of course the health of the consumer. From the beginning the hope was to reveal the Burgundian vineyards and have a large range of wines for a pleasant change. They use the best grapes possible, in order to limit the work of wine making and get the pure reflection of appellations .

Located on the alluvial fan of the valley of Savigny-les-Beaune, this parcel has stony alluvial soils mixed with marl limestone. The age of the vines is between 45 and 50. After a manual harvest maturity, the grapes are gently pressed with a pneumatic press. The juice is then decanted overnight and sung in barrels 2-4 wines. They start their fermentation by indigenous yeast and bacteria. After racking nine months later, the wines undergo debulking of membrane filtration 5μ then they are bottled by gravity.

This wine is quite accessible balanced maturity and fruit, fat and volume it will make you feel good long while. 5 to 7 years preservation (under the right conditions of temperature and humidity).
