Domaine Sylvain Loichet, Cotes de Nuits, Burgundy, France 2009
Domaine Sylvain Loichet is located in the heart of Burgundy in Chorey-les-Beaune. Since the takeover in 2005, many changes were made, while the vineyard is now in organic farming to meet the land, the ecosystem and of course the health of the consumer. From the beginning the hope was to reveal the Burgundian vineyards and have a large range of wines for a pleasant change. They use the best grapes possible, in order to limit the work of wine making and to get the pure reflection of appellations.
Vineyard. Located on Corgoloin, this mass selection of riparia of 65-70 years is on a slight slope with clay soils of orange-red.
After being hand-picked, the grapes are put into tanks in conical wooden vats. They then perform a cold maceration for one week and then trigger the fermentation naturally. The racking after 3 weeks of maceration is decided by tastings. After pressing, the wines are sung in oak barrels for a farm of about 24 months. The oak barrels are between 1 and 4 wines. After raising the wines, they are bottled by gravity without fining or filtration. This wine is concentrated, fleshy, and complex. Preservation of 10 to 12 years (under the right conditions of temperature and humidity).
